Ingredients
  

  • 4 medium russet potatoes about 2 lbs or 900 g",
  • 4 cups cold water about 1 liter
  • 1 tablespoon salt 15 g
  • teaspoons paprika 3 g
  • 1 teaspoon garlic powder 2 g
  • ½ teaspoon onion powder 1 g
  • ½ teaspoon black pepper 1 g
  • ¼ teaspoon cayenne pepper optional, for heat
  • Oil for frying e.g., vegetable oil or peanut oil, enough for deep frying"

Instructions
 

  • Wash and peel the russet potatoes. Cut the potatoes into waffle fry shapes using a potato cutter
  • Submerge the cut fries in a large bowl of cold water mixed with salt. Let them soak for at least 30 minutes to remove excess starch
  • In a small bowl, combine paprika, garlic powder, onion powder, black pepper, and cayenne pepper
  • In a heavy-bottomed pot or deep fryer, heat oil to 350°F (175°C)
  • Remove the fries from the water, pat them dry with paper towels
  • Fry the potatoes in batches to avoid overcrowding. Cook until golden brown, approximately 4-5 minutes per batch
  • Remove fries from oil and drain on paper towels. While still hot, sprinkle with the seasoning mixture
  • Serve hot and enjoy with your favorite sauces
