Wash and peel the russet potatoes. Cut the potatoes into waffle fry shapes using a potato cutter
Submerge the cut fries in a large bowl of cold water mixed with salt. Let them soak for at least 30 minutes to remove excess starch
In a small bowl, combine paprika, garlic powder, onion powder, black pepper, and cayenne pepper
In a heavy-bottomed pot or deep fryer, heat oil to 350°F (175°C)
Remove the fries from the water, pat them dry with paper towels
Fry the potatoes in batches to avoid overcrowding. Cook until golden brown, approximately 4-5 minutes per batch
Remove fries from oil and drain on paper towels. While still hot, sprinkle with the seasoning mixture
Serve hot and enjoy with your favorite sauces
