Ingredients
  

  • 4 cups crispy rice cereal
  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 2 tablespoons unsalted butter

Instructions
 

  • Line the 9x13-inch baking dish with parchment paper or lightly grease it.
  • In a large saucepan, combine sugar and corn syrup. Heat over medium heat, stirring until the mixture comes to a boil. Remove from heat.
  • Stir in the creamy peanut butter and vanilla extract until smooth and well-combined.
  • Add the crispy rice cereal to the peanut butter mixture, mixing until evenly coated.
  • Transfer the mixture to the prepared baking dish. Firmly press the mixture into an even layer.
  • In a microwave-safe bowl, combine chocolate chips and unsalted butter. Microwave in 30-second increments, stirring in between until melted and smooth.
  • Pour the melted chocolate mixture over the cooled cereal base. Use a spatula to spread evenly.
  • Allow the Scotcharoos to cool completely at room temperature or refrigerate for about 30 minutes. Cut into squares or rectangles and serve.
