Ingredients
  

  • 1 cup granulated sugar (200g)
  • 1 cup water (240ml)
  • 1 cup fresh mint leaves (packed, about 25g)
  • 1/2 cup fresh basil leaves (packed, about 15g)
  • 1/4 cup fresh rosemary leaves (about 10g)
  • 1 lemon juice (about 2 tablespoons, 30ml)

Instructions
 

  • Combine water and sugar in a saucepan. Bring to a low boil, stirring until sugar dissolves.
  • Remove the saucepan from heat. Stir in chopped mint, basil, and rosemary.
  • Cover and let the mixture steep at room temperature for 30 minutes.
  • Use a fine mesh strainer or cheesecloth to strain the herbs from the syrup.
  • Stir in fresh lemon juice until well combined.
  • Pour the cordial into a large bowl or pitcher and refrigerate until cold.
  • Mix 1 part cordial with 3 parts sparkling water or tonic over ice. Garnish with additional herb sprigs.

Notes

Use the freshest herbs possible for a vibrant flavor profile; adjust sugar according to preference.
