Ingredients

granulated sugar

fresh mint leaves
(packed, about 25g)

fresh basil leaves
(packed, about 15g)

fresh rosemary leaves
(about 10g)

lemon
juice
(about 2 tablespoons, 30ml)
Instructions
Combine water and sugar in a saucepan. Bring to a low boil, stirring until sugar dissolves.
Remove the saucepan from heat. Stir in chopped mint, basil, and rosemary.
Cover and let the mixture steep at room temperature for 30 minutes.
Use a fine mesh strainer or cheesecloth to strain the herbs from the syrup.
Stir in fresh lemon juice until well combined.
Pour the cordial into a large bowl or pitcher and refrigerate until cold.
Mix 1 part cordial with 3 parts sparkling water or tonic over ice. Garnish with additional herb sprigs.
Notes
Use the freshest herbs possible for a vibrant flavor profile; adjust sugar according to preference.
