Ingredients
  

  • 1 lb beef tripe cleaned and cut into strips
  • 2 tbsp vegetable oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 medium carrots diced
  • 2 medium potatoes diced
  • 1 bell pepper diced
  • 4 cups beef broth
  • 1 can diced tomatoes 14 oz
  • 2 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 bay leaves
  • 1 tbsp vinegar optional for taste

Instructions
 

  • Rinse beef tripe under cold water and cut into strips. Blanch tripe in boiling water for 10 minutes, then drain.
  • Heat vegetable oil in a large pot over medium heat. Add diced onion and sauté until translucent (about 5 minutes). Stir in minced garlic and cook for another 1-2 minutes.
  • Add diced carrots, potatoes, and bell pepper to the pot; sauté for 5 minutes. Stir in blanched tripe, diced tomatoes, and all spices (paprika, cumin, oregano).
  • Pour in beef broth and add bay leaves. Season with salt and pepper. Bring the mixture to a boil.
  • Reduce heat to low, cover, and simmer for approximately 2 hours, stirring occasionally, until tripe is tender.
  • Taste and adjust seasoning if needed. Remove bay leaves before serving. Optionally stir in vinegar for added brightness. Ladle into bowls and serve hot.
