- 1 lb beef tripe cleaned and cut into strips
- 2 tbsp vegetable oil
- 1 medium onion diced
- 3 cloves garlic minced
- 2 medium carrots diced
- 2 medium potatoes diced
- 1 bell pepper diced
- 4 cups beef broth
- 1 can diced tomatoes 14 oz
- 2 tsp paprika
- 1 tsp ground cumin
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 bay leaves
- 1 tbsp vinegar optional for taste
Rinse beef tripe under cold water and cut into strips. Blanch tripe in boiling water for 10 minutes, then drain.
Heat vegetable oil in a large pot over medium heat. Add diced onion and sauté until translucent (about 5 minutes). Stir in minced garlic and cook for another 1-2 minutes.
Add diced carrots, potatoes, and bell pepper to the pot; sauté for 5 minutes. Stir in blanched tripe, diced tomatoes, and all spices (paprika, cumin, oregano).
Pour in beef broth and add bay leaves. Season with salt and pepper. Bring the mixture to a boil.
Reduce heat to low, cover, and simmer for approximately 2 hours, stirring occasionally, until tripe is tender.
Taste and adjust seasoning if needed. Remove bay leaves before serving. Optionally stir in vinegar for added brightness. Ladle into bowls and serve hot.
