- 1 large onion (about 1 cup or 150 g), diced
- 3 cloves garlic minced
- 2 medium carrots (about 1 cup or 150 g), diced
- 2 medium potatoes (about 2 cups or 300 g), diced
- 6 cups vegetable broth (1.4 L)
- 1 can diced tomatoes (14 oz or 400 g), undrained
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley or dill for garnish (optional)
- Lemon wedges for garnish (optional)
Heat olive oil in a large stockpot over medium heat.
Add diced onion and sauté until soft, about 5 minutes.
