Ingredients
  

  • 1 medium head green cabbage (about 2 lbs or 900 g), chopped
  • 1 large onion (about 1 cup or 150 g), diced
  • 3 cloves garlic minced
  • 2 medium carrots (about 1 cup or 150 g), diced
  • 2 medium potatoes (about 2 cups or 300 g), diced
  • 6 cups vegetable broth (1.4 L)
  • 1 can diced tomatoes (14 oz or 400 g), undrained
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley or dill for garnish (optional)
  • Lemon wedges for garnish (optional)

Instructions
 

  • Heat olive oil in a large stockpot over medium heat.
  • Add diced onion and sauté until soft, about 5 minutes.
  • Stir in minced garlic and sauté for an additional minute.
  • Incorporate chopped cabbage, diced carrots, and potatoes into the pot.
  • Stir well and cook for another 5 minutes until vegetables start to soften.
  • Pour in the vegetable broth and add the canned tomatoes, cumin, and paprika.
  • Season with salt and pepper.
  • Bring the soup to a boil, then reduce heat to low.
  • Let it simmer for about 25 minutes until the vegetables are tender.
  • Taste and adjust seasoning if necessary.
  • Serve hot, garnished with fresh herbs and lemon wedges if desired.

Notes

For a richer flavor, allow the soup to cool and then refrigerate overnight. Reheat before serving to enhance the taste.
If you prefer a thicker soup, purée half of it with an immersion blender and then mix it back in.
Add a splash of vinegar or lemon juice just before serving for a bright finish.
