Ingredients
  

  • 2 lbs jidori chicken whole or cut into pieces
  • 1 tbsp soy sauce
  • 1 tbsp sake
  • 1 tbsp brown sugar
  • 1 tsp freshly grated ginger
  • 1/3 cup extra-virgin olive oil
  • 4 cloves garlic minced
  • 1/4 cup fresh parsley chopped
  • 2 tbsp fresh thyme chopped
  • 1 tsp red pepper flakes optional
  • Salt and pepper

Instructions
 

  • In a mixing bowl, whisk together soy sauce, sake, brown sugar, and ginger. Coat the jidori chicken in the marinade and let it sit for 30 minutes.
  • In a small saucepan over medium heat, combine olive oil and minced garlic. Sauté until fragrant but not browned, about 2-3 minutes. Stir in parsley, thyme, red pepper flakes, salt, and pepper.
  • Preheat oven to 400°F (200°C).
  • Arrange the marinated chicken in a baking dish. Brush half of the herb garlic oil over the chicken. Roast in the preheated oven until internal temperature reaches 165°F (75°C), about 30 minutes.
  • Halfway through cooking, baste chicken with remaining herb garlic oil for enhanced flavor.
  • Once done, remove from oven and let rest for 5-10 minutes. Slice and serve with extra herb garlic oil drizzled on top.

Notes

Allow the chicken to marinate longer for enhanced flavor. Use a meat thermometer to ensure perfect doneness without overcooking. Experiment with additional herbs like rosemary or oregano for different flavor profiles.
