Instructions
Pat the beef roast dry with paper towels. Rub the roast with olive oil, salt, pepper, garlic powder, and onion powder.
Heat a large skillet over medium-high heat. Sear the roast for about 3-4 minutes on each side until browned.
Place carrots, potatoes, onion, and garlic at the bottom of the crockpot.
Place the seasoned roast on top of the vegetables in the crockpot.
In a bowl, combine beef broth, Worcestershire sauce, and rosemary. Pour the mixture over the roast and vegetables.
Cover the crockpot and set it to low for 8 hours or high for 4-5 hours.
The roast should be fork-tender and vegetables should be soft.
Slice or shred the roast and serve with the vegetables drizzled in broth.
Notes
Chuck roast is ideal for slow cooking due to its marbling. Searing adds depth of flavor. Be sure to layer your vegetables properly.
