4slicesthick-cut sourdough bread(about 1/2 inch thick)
1poundgrilled chicken breastsliced (or a plant-based alternative)
1cuproasted bell pepperssliced
1cuparugula or spinach
1/2cupwhipped feta or cream cheese spread
2tablespoonsbalsamic glaze

Instructions
In a mixing bowl, combine whipped feta or cream cheese with a pinch of salt and pepper. Mix until smooth and set aside.
Preheat the grill or grill pan over medium-high heat. Season the chicken with salt, pepper, and a drizzle of olive oil. Grill for about 6-7 minutes per side or until cooked through.
While the chicken is grilling, place the sourdough bread slices on the grill for a couple of minutes until golden brown and crispy.
Spread a generous layer of the whipped feta on one side of each slice of toasted bread. Layer sliced grilled chicken, roasted bell peppers, and arugula atop half of the slices. Drizzle with balsamic glaze and top with the remaining slices, spread side down.
Lightly press down on the sandwiches and serve immediately, cut in half if desired.
